If you are creating a rice
recipe that you want to freeze for later use, undercook the rice for about 5 minutes.
You can incorporate all the ingredients as specified in the recipe but it is better
to stop cooking the rice 5 minutes before it's ready (undercook). This way, when
reheating, it will keep a fresh un-mushy taste. A rice dish can be frozen for
about a season if very well wrapped.
To reheat, after letting the rice
dish defrost overnight in the refrigerator, preheat oven at 350°F. Stir in
the dish into an oven bowl and heat for about one hour. The top of the dish can
even have a nice and tasty golden color.
Use
a fan to make some wind over the rice when sprinkling it with the sushi vinegar.
It will help creating a more visible shining sparkle to the dish.
