Raisin Rice Pudding

Makes about 4

1/2 cup long grain white rice
1 cup water
1/2 cup sugar
1/4 teaspoon salt
1/2 cup raisins
2.5 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
extra cinnamon for garnish

Heat rice in water over low heat for 15 minutes without stirring until the water is absorbed.

In a casserole mix the other ingredients including a bit of cinnamon and incorporate the cooked rice. Cook over low heat for about 45 minutes and stir once every 15 minutes.

Chill. Serve in separate dessert bowls and sprinkle with some more cinnamon.
