Vanilla Bean Rice Pudding

Makes about 4

3/4 cup American long grain white rice
1-1/2 cup water
4 cups milk
1/2 cup sugar
1/2 vanilla bean
1/2 cup raisins (optional)
1/4 teaspoon cinnamon
whipped cream for garnish (optional)

In a large casserole, heat the water and rice over medium heat. Cook and let simmer the rice for about 15 minutes.

Remove the seeds from the vanilla bean; set aside. In the casserole, add in the milk, vanilla bean and optional raisins. Cook at medium heat while stirring frequently until the rice begins to look like oat meal. Take off the heat, remove the vanilla bean from the mixture and stir in the cinnamon and vanilla seeds. Put in small desert bowls and top with the optional whipped cream.
