Italian Garlic and Onion Rice

Makes about 4

1 cup of minute rice
1/4 cup of chopped onion
1 garlic clove
2 tablespoon olive oil
2 small tomatoes, chopped
1 cup chicken broth
2 tablespoon Parmesan cheese
Some parsley

Sauté the garlic and onion in oil for 2 to 3 minutes. Incorporate the tomatoes and stir for one minute. Add the chicken broth and bring to a boil. Stir in the rice for 2 minutes and set aside for another 5.

Serve with shredded Parmesan and parsley over this nice side dish.
